Rainbow Salad with Tahini-Watercress Dressing
Serves: 2
For dressing
  • ½ cup lightly packed watercress leaves
  • ½ cup tahini
  • ¼ cup freshly squeezed lemon juice
  • 2 scallions, chopped
  • 1 Tbsp tamari
  • 1 Tbsp water
  • 1 garlic clove, minced
  • 6 cups mixed organic baby greens
  • 1 cup thinly sliced organic red cabbage
  • 1 cup thinly sliced organic green cabbage
  • 1 small unpeeled organic cucumber, cut into ½-inch cubes
  • 2 organic carrots, peeled and shredded
  • 1 small organic beet, peeled and shredded
  1. To make the dressing blend all the ingredients in a blender until smooth and creamy.
  2. To make the salad combine all the ingredients in a bowl. Just before serving toss the salad with enough dressing to coat and serve. The dressing will keep for 4 days, covered and refrigerated.
About the ingredients
Tahini is a paste made from ground sesame seeds.
Tahini is one of the best sources of calcium. It is high in vitamin E, B1, B2, B3, B5 and B15. It helps promote cell growth it is rich in minerals such as phosphorous, lecithin, magnesium, potassium and iron. Tahini has 20% complete protein, making it a higher protein source than most nuts.
