Roasted Cauliflower with Cashew Sauce
Serves: 2
  • 1 pound cauliflower cut into bite size pieces
  • 6 Tbsp olive oil
  • ¼ tsp sea salt
Cashew Sauce
  • 1 ½ cup of cashews, soaked for at least 4 hours
  • 3 Tbsp nutritional yeast
  • ¼ tsp sea salt
  • 2 Tbsp lemon juice
  • 1 garlic clove, grated
  • 1 Tbsp organic onion powder
  • 6 Tbsp of water
  1. Preheat oven to 425F
  2. Toss the cauliflower in the olive oil and add salt. Spread the cauliflower evenly on a rimmed baking sheet. Bake for 20 minutes, until cauliflower begins to brown and starts to get crispy.
  3. In the mean time drain and rinse the cashews and place them in a high speed blender with the rest of the ingredients for the sauce, and blend until you achieve a smooth creamy consistency.
  4. Toss the cauliflower in the cashew sauce, sprinkle with some parsley or cilantro and enjoy as a side dish to grilled portobellos or grilled blackened tofu.
