
This cashew cream is a delicious way to enjoy dairy-free goodness to your diet. No cholesterol, no gluten free, vegan and so good for you. You have protein and fiber from the cashews and antioxidants from the yummy berries. Super easy to make. Enjoy it for a healthy breakfast or any time you want to enjoy a healthy treat.
Yield: 4 servings
For the cream:
2 cups raw cashews, soaked overnight or min 4 hours
¼ cup of water
1 teaspoon vanilla extract
2 tablespoons maple syrup
For the parfait:
1 cup of washed strawberries, quartered
1 cup of washed blueberries
For the cream place all the ingredients in a high-speed blender and process on high speed until smooth. Use the tapper that comes with your blender to move the cream around until the cream is smooth and not grainy. Chill the cashew cream for at least 30 minutes before serving.
To assemble the parfait place the cream at the bottom of a glass cup (I like to use 8 oz mason jars) layer the strawberries and top with the blueberries.
You can store the parfaits in the fridge for three days.
